Matt Gaw - 2020

Wildcrafted Fermentation: Exploring, Transforming, and Preserving the Wild Flavors of Your Local Terroir

Pascal Baudar - 2020
It's the easiest and safest way to preserve food, and nature provides all that's required: plants, salt, and the beneficial lactic acid bacteria found everywhere. When we ferment a food, we transform it, making it more delicious and nutritious and creating new and wonderful flavors that bring it to a whole new level.Today fermented foods have become fashionable among chefs at high-end restaurants and health-conscious consumers alike. The creative possibilities are endless, especially when we gather and use plants from our local environment. Every landscape, every ecosystem is unique, yet many common edible plants are widely distributed throughout North America and in other parts of the world. In fact, many non-native plants have become too successful, and they are considered invasive or even "noxious weeds." Wouldn't it be better to sustainably harvest the seasonal bounty and ferment these tasty plants rather than trying to eradicate them with herbicides? In Wildcrafted Fermentation, Pascal Baudar provides all the basics needed to make creative ferments at home. From simple wild sauerkrauts and kimchis to hot sauces, savory pastes, non-dairy cheeses, dehydrated spice blends, and much more, Baudar includes over 100 easy recipes to inspire even the most jaded palate. The recipes can be easily adapted by people who buy seasonal and local produce, or who harvest from their own gardens. And step-by-step photos of processes and finished dishes will inspire the adventurous home cook to experiment with both wild and cultivated plants. Knowing the basic methods of fermentation, as well as specific techniques like how to cut and prepare different kinds of plants, provides the confidence to succeed like a pro.Wild-gathering greens, stems, roots, berries, fruits, and seeds is a great way to work with your local terroir and reconnect with nature in a deeply rewarding and positive way. As Baudar writes, "Fermentation is an incredible tool if your quest is to create a cuisine unique to you and your environment."

Porkopolis: American Animality, Standardized Life, and the Factory Farm

Alex Blanchette - 2020
In Porkopolis Alex Blanchette explores how this rural community has been reorganized around the life and death cycles of corporate pigs. Drawing on over two years of ethnographic fieldwork, Blanchette immerses readers into the workplaces that underlie modern meat, from slaughterhouses and corporate offices to artificial insemination barns and bone-rendering facilities. He outlines the deep human-hog relationships and intimacies that emerge through intensified industrialization, showing how even the most mundane human action, such as a wayward touch, could have serious physical consequences for animals. Corporations' pursuit of a perfectly uniform, standardized pig—one that can yield materials for over 1000 products—creates social and environmental instabilities that transform human lives and livelihoods. Throughout Porkopolis, which includes dozens of images by award-winning photographer Sean Sprague, Blanchette uses factory farming to rethink the fraught state of industrial capitalism in the United States today.

Healthy Buildings: How Indoor Spaces Drive Performance and Productivity

Joseph G. Allen - 2020
When that door opens, it literally breathes life back into the room. But there is a lot more acting on your body that you can't feel or see. From our offices and homes to schools, hospitals, and restaurants, the indoor spaces where we work, learn, play, eat, and heal have an outsized impact on our performance and well-being. They affect our creativity, focus, and problem-solving ability and can make us sick--jeopardizing our future and dragging down profits in the process.Charismatic pioneers of the healthy building movement who have paired up to combine the cutting-edge science of Harvard's School of Public Health with the financial know-how of the Harvard Business School, Joseph Allen and John Macomber make a compelling case in this urgently needed book for why every business and home owner should make certain relatively low-cost investments a top priority. Grounded in exposure and risk science and relevant to anyone newly concerned about how their surroundings impact their health, Healthy Buildings can help you evaluate the impact of small, easily controllable environmental fluctuations on your immediate well-being and long-term reproductive and lung health. It shows how our indoor environment can have a dramatic impact on a whole host of higher order cognitive functions--including things like concentration, strategic thinking, troubleshooting, and decision-making. Study after study has found that your performance will dramatically improve if you are working in optimal conditions (with high rates of ventilation, few damaging persistent chemicals, and optimal humidity, lighting and noise control). So what would it take to turn that knowledge into action?Cutting through the jargon to explain complex processes in simple and compelling language, Allen and Macomber show how buildings can both expose you to and protect you from disease. They reveal the 9 Foundations of a Healthy Building, share insider tips, and show how tracking what they call "health performance indicators" with smart technology can boost a company's performance and create economic value. With decades of practice in protecting worker health, they offer a clear way forward right now, and show us what comes next in a post-COVID world. While the "green" building movement introduced important new efficiencies, it's time to look beyond the four walls--placing the decisions we make around buildings into the larger conversation around development and health, and prioritizing the most important and vulnerable asset of any building: its people.

Return of Nature: Socialism and Ecology

John Bellamy Foster - 2020
More than simply a study of Marx, it commenced an intellectual and social history, encompassing thinkers from Epicurus to Darwin, who developed materialist and ecological ideas. Now, with The Return of Nature: Socialism and Ecology, Foster continues this narrative. In so doing, he uncovers a long history of efforts to unite issues of social justice and environmental sustainability that will help us comprehend and counter today's unprecedented planetary emergencies. The Return of Nature begins with the deaths of Darwin (1882) and Marx (1883) and moves on until the rise of the ecological age in the 1960s and 1970s. Foster explores how socialist analysts and materialist scientists of various stamps, first in Britain, then the United States, from William Morris and Frederick Engels to Joseph Needham, Rachel Carson, and Stephen J. Gould, sought to develop a dialectical naturalism, rooted in a critique of capitalism. In the process, he delivers a far-reaching and fascinating reinterpretation of the radical and socialist origins of ecology. Ultimately, what this book asks for is nothing short of revolution: a long, ecological revolution, aimed at making peace with the planet while meeting collective human needs.

Gordon Parks: The Atmosphere of Crime, 1957

Gordon Parks - 2020
Parks embarked on a six-week journey that took him and a reporter to the streets of New York, Chicago, San Francisco and Los Angeles. Unlike much of his prior work, the images made were in color. The resulting eight-page photo-essay "The Atmosphere of Crime" was noteworthy not only for its bold aesthetic sophistication, but also for how it challenged stereotypes about criminality then pervasive in the mainstream media. They provided a richly hued, cinematic portrayal of a largely hidden world: that of violence, police work and incarceration, seen with empathy and candor.Parks rejected clichs of delinquency, drug use and corruption, opting for a more nuanced view that reflected the social and economic factors tied to criminal behavior and afforded a rare window into the working lives of those charged with preventing and prosecuting it. Transcending the romanticism of the gangster film, the suspense of the crime caper and the racially biased depictions of criminality then prevalent in American popular culture, Parks coaxed his camera to record reality so vividly and compellingly that it would allow Life's readers to see the complexity of these chronically oversimplified situations. The Atmosphere of Crime, 1957 includes an expansive selection of never-before-published photographs from Parks' original reportage.Gordon Parks was born into poverty and segregation in Fort Scott, Kansas, in 1912. An itinerant laborer, he worked as a brothel pianist and railcar porter, among other jobs, before buying a camera at a pawnshop, training himself and becoming a photographer. He evolved into a modern-day Renaissance man, finding success as a film director, writer and composer. The first African-American director to helm a major motion picture, he helped launch the blaxploitation genre with his film Shaft (1971). Parks died in 2006.

Less Broken

Eve R. Hart - 2020
I should have been hesitant to let anyone get close to me after that. Then along came this mystery man. I couldn’t stop thinking about him, even though I knew nothing about him. Not even his name.He came crashing into my life entirely too fast and I couldn’t run from him. Honestly, I didn’t want to. He was beautiful when he forgot the darkness that consumed him inside. I felt safe and protected with him.Until I found out who he really was.In one single night, he made me come alive, and then broke my heart. As fast as he came into my life, he was gone, and all I wanted was to be in his arms again.CadeI was sent to watch over him from the shadows, not get close to him. From the moment I stared into Theon’s eyes, I was caught. I knew I shouldn’t have approached him, but that was exactly what I did. I pushed myself into his life. I told myself it was to keep him safe, but deep down, I knew better.Theon trusted me when he shouldn’t have. And I… I took that trust and ripped it to shreds. If he knew my real connection to him and why I was there, I’d lose him. But I was too far in to turn the lie around.Even knowing he’d never trust me again once he found out the truth.
